Adjust oven rack to the top position and preheat oven to 425°F. Wash and dry all produce.

Drain any excess liquid from the @diced skinless dark meat chicken{12%oz}. In a #large pan{}, heat @cooking oil{1%tbsp} over medium-high heat. Add @green bell pepper{1%piece}, @onion{1%piece}, and chicken. Season with @blackening spice{1%tsp}, @fry seasoning{1%tsp}, @salt{1%tsp}, and @black pepper{1%tsp}. Cook until chicken is cooked through and vegetables are tender ~{8%minutes}. Set aside.

Place @flour tortillas{4%pieces} on a clean work surface. Evenly sprinkle @mozzarella cheese{½%cup} onto one half of each tortilla. Top with the chicken filling, then top chicken with @mexican cheese blend{1%cup}. Fold tortillas in half to create quesadillas.

Lightly coat a #baking sheet{} with @cooking spray{1%spray}. Place quesadillas on the sheet and bake on the top rack until golden brown ~{15-20%minutes}.

While quesadillas bake, in a #medium bowl{}, combine @mango chutney{2%tbsp}, half the @cilantro{2%tbsp}, and juice from two @lime{1%piece} wedges. Season with salt and pepper.

Transfer quesadillas to a cutting board and slice into thirds. Serve with salsa, @sour cream{2%tbsp}, remaining cilantro, and @hot sauce{1%tbsp} on the side.
